Recipes for Brandi

:)  Because Brandi supports and encourages my culinary experiments.
And because she told me to blog about these tasty adventures...

I tend to liberally edit recipes I find online.  They are not fancy and they don't include sophisticated ingredients, but I have fun.  Generally, my mission is to make recipes more nutritious or at least slightly less unhealthy.

Anyways, here are some winners...

Chewy Yummy Oatmeal Chocolate Chip Cookies

1/2 c  Butter  (1 stick)
1/2 c  Applesauce, unsweetened
1 c  Brown sugar
1/2 c  Sugar
2  Eggs
1 tsp  Vanilla extract
1 1/4 c  All-purpose flour
1 tsp  Baking soda
1/2 tsp Salt
3 c Quick-Cooking Oats
2 c Dark Chocolate Chips  (or Semi Sweet, but Dark is my favorite :) )

  • I start by beating the softened butter, applesauce, btoen sugar and white sugar together.
  • Next come the eggs and vanilla extract.  Mix again, but the ingredients won't be perfectly blended together.
  • Now the dry ingredients!  First add the flour, soda, and salt.  Mix, then add in the oats, and lastly- the chocolate chips!
  • Scoop dough with a regular tablespoon onto a greased or  non-stick cookie sheet
Note - When placing the dough on the pan, keep in mind that they will not spread out while they're baking.  The shapes of the cookies will remain fairly similar to the shapes of the dough when you put it in the oven.

  • Bake at 350 for 10 min or so... you know, until they seem cooked.

One great feature of these cookies- they keep really really well in baggies or tupperware.  I even sent a batch to Afghanistan in a care package.  After a week or two in the mail, they remained in tact and moist- thank you Applesauce!

Blackberry Peach Cobbler 
My first ever cobbler was exciting for me and positively delicious for everyone else involved!  I'm not just saying that either- this cobbler is REALLY good!  Made with fresh Costco (gotta love it) peaches and locally grown Blackberries, fresh from the Issaquah Farmer's Market.  :)  Yum. 
Here's how you can make it, too!

1/4 c. Butter, melted
3 c. sliced fresh peaches
2 c. fresh blackberries  (I'm sure frozen would work fine, too)
3/4 c. plus 1 Tbs. flour
1 c. sugar
1/3 c. oats
1/4 tsp. ground ginger
1 tsp. cinnamon
1 Tbs baking powder  (Something I forgot, but definitely a good idea to remember)
1/4 tsp. salt
1 cup milk

  • Preheat the oven to 350 F
  • Grease a 2-quart baking dish with cooking spray and pour 2 Tbs of melted butter into the bottom.
  • In a mixing bowl, combine peaches, blackberries, and 1 Tbs of flour.  Toss gently to mix without crushing the berries.  Add 1/4 c. of the sugar as well as the ginger and cinnamon.  Pour this fruit mixture into the baking dish.
  • In another mixing bowl (or after rinsing/drying the first), combing the remaining 3/4 c. flour, 3/4 c. sugar, baking powder, and salt.  Add remaining 2 Tbs of melted butter and 1 c. of milk.  Pout batter evenly over the fruit mixture.
  • Now, let this masterpiece bake for about 1 hr and 10 min... or until it is golden brown.
Let cool for a few minutes before dishing into bowls with cold vanilla ice cream (crucial).
